RESERVE
Sherry Vinegar
Elaborated through the spontaneous (or natural) acetification of Manzanilla wine, it has been aged for years in our cellars in Sanlúcar de Barrameda using the traditional Soleras and Criaderas fractional blending method. Its long ageing and the quality of the wines it comes from produce a rich, wide aromatic range, and a harmonious and intense bouquet.

AND FINESSE
Historically, the singularities of the wine-making industry and family pride meant that no one wanted to admit that some of their wines had “turned” to vinegar, so this product was euphemistically referred to as “wine for stews”. As a result, it was marketed only to employees, family and friends.

Vinegar of a wonderful mahogany colour, bathed in amber tones with an intensity appropriate to its long ageing
NOSE
In its acetic aromas, wine and spicy notes are easily detected, which makes it especially suggestive, reminiscent of the old Manzanillas from which it comes.
MOUTH
Its unmistakable nuances of biological ageing have special prominence, through the soft aromas of yeast (veil of flor), mixed with hints of the old and excellent wood in which it is matured.
FOOD PAIRING

Due to its unique characteristics, it is recommended for dressings and salads, vinaigrettes, marinades, reductions, game and fish dishes. It is also the perfect ally for dressings and cold soups, such as gazpacho or ajoblanco.
