Sherry Vinegar
Vinegar elaborated through the spontaneous (or natural) acetification of Manzanilla wine, it has been aged for years in our cellars in Sanlúcar de Barrameda using the traditional Soleras and Criaderas fractional blending method. Its long ageing and the quality of the wines this produces leads to a rich wide aromatic range and a harmonious and intense bouquet. Slightly sweet due to its ageing with Pedro Ximénez wine, it is the sweetest of our vinegars. But its sweetness still allows its elegant acidity to be perceived.

AND BALANCE ON THE PALATE
Specially good for sweet and sour dishes and to accompany the most powerful flavours. Perfect for caramelizing, for example, onions. Due to its organoleptic characteristics, Pedro Ximénez Reserve Vinegar is a special pairing for meat dishes, roasts, cheese-based salads, reductions and desserts.

MOUTH
Slightly sweet flavour, softly liqueur-like and balanced in the mouth. It harbours a breadth of aromatic nuances and a long and attractive aftertaste, with hints of raisins.
