TOTO BARBADILLO

Toto Barbadillo is a sparkling wine from Cádiz, made mostly with palomino grown on albariza soils according to the traditional method, with a 20-month second fermentation in the bottle. It is the third generation of sparkling wines from Barbadillo, and the one with the longest ageing in the winery.

PERFECTLY INTEGRATED
FINESSE AND ELEGANCE

A very dry sparkling wine, which reveals the limestone of the region and surprises with its freshness, possibly contributed by the special soils of the Jerez area. A bright pale yellow colour with fine bubbles, highlighting the finesse and elegance perfectly integrated in both nose and mouth.

VINEYARDS AND HARVEST

TOTO BARBADILLO

The entire vineyard is located in the Santa Lucía estate. The main variety is palomino fino from vines that are more than thirty years old, and this is complemented by a vineyard on the same estate of the chardonnay variety.

The type of soil, 100% Albariza, confers very particular characteristics to this wine.

Albariza is a marl (soft rock formed by sediments) with remains of diatoms (microscopic unicellular algae whose cellular wall is formed by a silicon shell known as frustule). These form a unique soil that is very light and porous, which is very important for the root system of the vine. As the profile of the albariza soils is homogeneous, the roots are able to reach the marl or tosca -soft rock- and continue to advance until they reach more than ten metres in length.
