MANZANILLA PASTORA

Pastora is a Manzanilla that has undergone a long biological ageing process, and which is therefore considered a Manzanilla pasada (around nine years old). It is deeply rooted in the soleras of Solear, and from there it moves on to occupy a very specific space in the La Pastora winery, perfectly suited to ageing, with a clear orientation to the river, right on the embankment that divides the upper and lower neighbourhoods of Sanlúcar.

The specific ageing conditions offered by the cellar that stores it give rise to a biological wine that is far removed from the austere character that can be sensed in the En Rama Saca Estacional Manzanilla offered by the winery of El Potro. In short, Pastora is a Manzanilla characterised by its golden colour, marked aromas of yeast and flavour of nuts and chamomile, with a particularly smooth entry and persistence in the mouth.

The variety is 100% palomino fino and the soil type 100% Albariza. The grapes come from the main vineyards of the Marco de Jerez, as well as from Barbadillo’s own vineyards in Gibalbín and Vina Santa Lucía.
